Celebrating its 30th anniversary in 2019, the Doreau barrel mill is located in the heart of the Cognac region, the cradle of our history which began in 1989, and is deeply attached to this terroir. Through the production of their barrels, they continue to preserve the know-how of traditional coopers.

The Doreau company has developed a wide range of barrels. The idea behind their development is to combine the expertise of their barrel makers and winemakers to enhance the unique characteristics of wines and spirits.

Doreau is characterized by its thorough control of the barrel production process, based on scientific evidence, and its respect for sound craftsmanship and the spirit of craftsmanship. In Japanese terms, the company values both “technique “技 and “spirit “心. The trust placed in Doreau, recognised by LVMH (Moët Hennessy Louis Vuitton), one of the world’s leading brands, which has placed Doreau under its umbrella, is due in large part to the commitment described below.

Compliance with strict international standards

In close collaboration with representatives of the wood industry and forestry contractors, their buyers select a wide range of quality wood from French forests.

Quality commitment:

Doreau’s QSE [Quality, Safety and Environment] policy guarantees excellent product quality and compliance with food standards. It is also respected in the manufacture and repair of the drums. *ISO 22000.

The PEFC certification shows a commitment to reforestation and sustainable management.

A rigorous management system

Doreau uses barcodes to track quality from the wood – the oak – to the final barrel. Doreau is also audited annually by external companies (customers and quality control agencies).

In addition, the quality department is responsible for ensuring the best possible quality throughout the barrel production process by analysing the oak, water, etc.

Photographs can also be taken during the loading of the trucks, giving customers greater confidence in their shipments.

Sensory enhancement

Doreau’s expertise controls all stages of production, including natural wind drying.

Like the grapes chosen by the winemaker, they carefully select the oak wood and extract only the finest parts.

The traditional fire treatment allows them to create a special “bousinage” suitable for wines and spirits. Temperature, time and colour also help to maintain consistency. Their barrels, combined with harmonious toasting, bring out the characteristics of the wine or spirit and respect its delicacy and individuality.

*Bousinage is a barrel making process in which the inside of the barrel is toasted by fire. This process changes the physical and chemical composition and structure of the wood in the barrel and plays an important role in imparting aromas and flavours to barrel-aged beverages. Bousinage is based on the French barrel-making tradition and produces different aromas and colour tones depending on the degree of roasting.

We are committed to training our young people. Of course, we see them developing not only for our own benefit, but for the growth of the industry as a whole. That’s very important to us, and the key is to support them. We support them not only in their work, but also in their future prospects and goals.

Take the example of Jarnak, our younger generation group: they have grown up and worked with us. Solid skills and knowledge are passed on within our company. But this did not happen overnight; it was slowly fostered over a long period of time. Today, we have a solid foundation and culture.

A foundation and a culture of which we are very proud, an invisible and precious thought filled with passion, desire and energy, and which we intend to pass on to future generations.

International standards for quality assurance

ISO22000

ISO 22000 is an international standard for food safety management systems. A food safety management system is a management system designed to analyze hazards that occur during the manufacturing and distribution of food, identify critical control points, monitor them, and provide safe food to consumers. ISO 22000 is based on the principles of HACCP (Hazard Analysis and Critical Control Point) and also takes into consideration the compatibility with ISO 9001 (Quality Management System). ISO 22000 applies to all organizations involved in food-related activities. This includes not only food manufacturing and processing industries but also agriculture, livestock farming, distribution and retail industries, catering and food delivery services, as well as packaging materials and additives manufacturing industries. By conforming to ISO 22000, organizations involved in the food chain from production to consumption can reduce food safety risks and enhance customer and consumer trust. ISO 22000 sets forth the following requirements: Develop and communicate a food safety policy and objectives to both internal and external parties. Establish a food safety team and define responsibilities and authorities. Determine the scope and processes of the food safety management system. Understand and comply with food safety regulations and customer requirements. Identify and analyze internal and external issues and stakeholders affecting food safety. Conduct hazard analysis, identify critical control points, and establish monitoring plans and corrective actions. Determine specifications and characteristics of processes and products. Evaluate the effectiveness of the food safety management system through verification activities and internal audits. Conduct management reviews to confirm the conformity and suitability of the food safety management system. Continuously improve the system.​

PEFC Certified

PEFC certification, which stands for Programme for the Endorsement of Forest Certification, is one of the international forest certification systems. The purpose of PEFC certification is to promote sustainable forest management by mutually recognizing and implementing forest certification systems developed by various regions based on intergovernmental process criteria. PEFC certification consists of Forest Management (FM) certification and Chain of Custody (CoC) certification, and Doreau Company has obtained the former certification. FM certification evaluates whether forest owners and managers are utilizing forest resources while protecting forest ecosystems, biodiversity, and respecting social, economic, and cultural values. PEFC certification is the most widely recognized forest certification system worldwide, and as of the end of March 2021, approximately 330 million hectares of forests have been PEFC certified.
